Preparation

  • Preparation: 30 mn
  • Cooking: 30 mn

Ingredients

  • 1/2 kg beef
  • 1/2 kg pork
  • 200 g bacon
  • 2 hard-boiled egg yolks
  • 100 g ground almonds
  • 3 crushed garlic cloves
  • 2 eggs
  • 100 g breadcrumbs
  • 1 tbsp dry Malvasia wine
  • 1 bunch chopped parsley
  • salt - pepper - a little nutmeg
  • a little flour
  • For the sauce: 1 cup olive oil - 1 onion - 1 kg tomatoes - 1/2 cup dry Malvasia wine - 1 cup meat stock - a little saffron - sugar - salt - pepper - 1/2 bunch chopped parsley

Method

Mince the meat, bacon and the hard-boiled egg yolks together. Add the ground almonds, the garlic and the 2 eggs together with the breadcrumbs, wine and chopped parsley and mix everything very well. This will be better done with moist hands.
Season with a little nutmeg and generously with salt and pepper, mix well, shape the mixture into small meat balls and roll them in the flour.
Heat the oil in a large frying pan and cook the meatballs until evenly browned, turning frequently. Remove from the pan and keep warm.
To prepare the sauce, peel the onion and chop finely. Blanche the tomatoes with boiling water, peel, deseed and chop. Heat the olive oil in the same pan and brown the onions a little, then add the tomatoes.
Add wine and meat stock, incorporate all spices and leave it all to boil until it reaches the desired consistency, turning frequently.
Now add the meatballs, that have been kept hot, to the sauce and simmer at low heat, with the lid on for approx. 15 minutes.
